Hello!
So you may remember that I put in a poll in the last newsletter to see what recipes you would like me to work on…and the top two were oatmeal cookies and a banana date loaf.
So I got to work, bought some bananas, and waited for them to ripen. While I was waiting, I tested two oatmeal recipes - an oatmeal raisin and an oatmeal chocolate chip. Which I’m really hoping will be out next week.
But the ripe bananas dictated what needed to be baked and completed…so this week I am bringing to you a really delicious banana date loaf!
Banana Date Loaf
This was a super simple marriage of my banana bread and my date and walnut loaf. One of the easiest tests I have ever done I have done in a long while.
And honestly, a slice of this loaf is such a great addition to the week’s lunchbox. It pairs perfectly with a hot cup of afternoon tea.
Then on Wednesday morning, we had the bright idea to toast some of this bread on the stovetop in a touch of butter. And it was amazing! So highly recommend toasting in a pan over medium-high heat.
